Mukimo is a cuisine whose origin is Central Kenya (Agikuyu hamlet), but it is now available in hotels all throughout Kenya, demonstrating the country's diversity. So, if you've been curious about how to create these dinners at home, here's a fast recipe to get you started.
Ingredients
- Irish potatoes, 1 kilogram (select fresh for better taste)
- spinach or pumpkin leaves 2 handfuls (soft and fresh)
- Soft maize 3 cups (de-cobbed)
- In a bundle, 4 spring onions (finely chopped)
- 2 teaspoon of cooking oil
- To taste, season with salt
Direction
- Peel and cut the potatoes into halves with care, then wash and set aside.
- Remove the stalk from the pumpkin leaves and shred them into manageable bits.
- You can also mix them together to get a more vibrant color.
- If you're using spinach, you'll just need to shred a small amount.
- In a Sufuria, combine the pumpkin leaves, corn, and potatoes, and pour just enough water to cover everything.
- Place the Sufuria or cooking pot over medium heat and let the ingredients to boil for 30 minutes.
- Cook for ten more minutes after opening and add a pinch of salt
- Under low heat using a wooden spoon mash everything until fully combined .Serve with the veggies,beef or chicken stew of your choice.
