In fact, pilau is the dish I most look forward to during Kenyan weddings dowry ceremony and many other ceremonies. What could be better than a delicious blend of spices in just the correct amounts blended with rice?
Pilau, also known as pilaf, is an Indian dish that was most likely imported and altered for use in East African kitchens. Pilau Rice is a richly flavored rice that is served in East African countries and countries in the Swahili area of Africa as a celebration dish.
There are various methods to cook and enjoy your pilau some of the pilau varieties include :
  • Coconut pilau (most common)
  • Chicken pilau
  • Mbuzi pilau
  • Beef pilau
  • Pilau Njeri

Coconut Pilau

Are you a coconut lover wondering how to make some yummy coconut pilau? Hurray! I got you covered here is how to make some delicious coconut pilau .

Ingredients
  • rice (three cups)
  • coconut milk (two cups)
  • water 2 cups
  • 2 tablespoon extra virgin olive oil
  • 2 tablespoon melted margarine
  • 3 potatoes 
  • 3 onions(diced)
  • 1 tablespoon cumin seeds, crushed
  • 12 tablespoons black peppercorns, crushed
  • 2 cinnamon sticks
  • 2 cardamom pods
  • 1 tablespoon garlic powder
  • 12 tblsp turmeric powder
  • 1 teaspoon coriander powder
  • season with salt to taste
  • coriander(chopped) for garnishing
Directions
  • Rice should be washed, rinsed, and then soaked.
  • Combine the margarine and oil in a pan
  • Once the pan is hot add black pepper,cinnamon stick,cumin seeds and cardamom.
  • Fry the chopped onions until they are golden brown.
  • After that, add the garlic and spices powdered.
  • For it to combine and be coated thoroughly stir everything. After that, pour in water and  coconut milk .
  • Stir and add a pinch of salt.Drain and mix in the soaked rice.
  •  For a few minutes allow it to summer. Then reduce the heat to medium and give everything a good swirl every now and then.
  • Allow to steam for around 10-15 minutes on low heat.
  • Ready for  serving, don't forget to garnish with the corriander.Enjoy
